Golap Jaam Recipe (Step by Step)

Ingredients:

1/4 tsp baking soda

2 tbsp melted ghee (clarified butter)

1/4 cup milk (warm, for kneading)

For the Syrup:

1.5 cups sugar

1.5 cups water

2-3 cardamom pods, crushed

1 tsp rose water (optional)

A few saffron strands (optional)

For Frying:

Ghee or oil (for deep frying)

Instructions:

Step 1: Prepare the Sugar Syrup

1. In a saucepan, combine sugar and water.

2. Heat the mixture and stir continuously until the sugar dissolves completely.

3. Add the crushed cardamom pods and saffron (if using).

4. Bring the syrup to a boil, then lower the heat and simmer for 5-7 minutes until it thickens slightly.

5. Remove from heat and stir in the rose water.

6. Set the syrup aside and keep it warm.

Step 2: Make the Dough

1. In a large bowl, mix together the milk powder, all-purpose flour, and baking soda.

2. Add the melted ghee and warm milk gradually, mixing the ingredients to form a soft dough. The dough should be smooth and pliable but not too sticky.

3. Let the dough rest for about 10 minutes.

Step 3: Shape the Dough

1. Divide the dough into small equal-sized portions (about 10-12).

2. Roll each portion into a smooth ball, making sure there are no cracks in the surface. If there are cracks, the dough may break during frying.

3. Set the dough balls aside.

Step 4: Fry the Dough Balls

1. Heat ghee or oil in a deep pan over low to medium heat.

2. Carefully drop the dough balls into the hot oil.

3. Fry them slowly on low heat, stirring gently to ensure even browning. Fry until they turn golden brown (about 5-7 minutes).

4. Once golden, remove them from the oil and place them on a paper towel to drain excess oil.

Step 5: Soak in Sugar Syrup

1. Immediately transfer the fried dough balls into the warm sugar syrup.

2. Let them soak for at least 30 minutes, allowing the dough balls to absorb the syrup and become soft.

Step 6: Serve

1. Serve the Golap Jaam warm or at room temperature.

2. Garnish with crushed pistachios or almonds if desired.
