Steak

Steak is a cut of meat, typically beef that is sliced perpendicular to the muscle fibers, usually across the sirloin, rib, or other cuts. It's often cooked by grilling, pan-frying, or broiling and can be seasoned or marinated according to preference. The texture and flavor of a steak can vary depending on the cut and cooking method.

History of Steak

The concept of cooking meat over an open flame or in a hot pan dates back to ancient times. The term "steak" itself originates from the Old Norse word "steik," which means "roast." Historically, steaks were a common part of the diet in various cultures, with the practice of grilling or pan-frying meat becoming more refined over time.

In the 19th century, steak became popular in European cuisine, and its preparation techniques were further developed. The Industrial Revolution and advances in meat preservation and transportation helped steak gain widespread popularity, especially in countries like the United States, where beef became a staple in many diets.

Pan-Seared Steak Recipe

Ingredients:

  • 1 ribeye steak (or your preferred cut), about 1 inch thick
  • Salt (preferably kosher or sea salt)
  • Freshly ground black pepper
  • 2 tablespoons vegetable oil (or another high-smoke-point oil)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, crushed
  • 2-3 sprigs fresh thyme or rosemary (optional)
  • 1 tablespoon balsamic vinegar or red wine (optional for deglazing)

Equipment:

  • Heavy-bottomed skillet (cast iron is ideal)
  • Tongs
  • Meat thermometer (optional, for precision)
  • Aluminum foil (for resting the steak)

Instructions:

1. Prepare the Steak:

  • Take the steak out of the refrigerator about 30 minutes before cooking to allow it to come to room temperature. This ensures even cooking.
  • Pat the steak dry with paper towels to remove excess moisture. This helps achieve a better steer.

2. Season the Steak:

  • Generously season both sides of the steak with salt and freshly ground black pepper. You can also add other spices or a steak rub if you prefer.

3. Heat the Skillet:

  • Place a heavy-bottomed skillet over medium-high heat. Allow it to get very hot; you should see a bit of smoke when it’s ready.
  • Add the vegetable oil and heat until shimmering.

4. Sear the Steak:

  • Carefully place the steak in the hot skillet. It should sizzle immediately. Avoid moving it around to ensure a good sear.
  • For a 1-inch thick steak, cook for about 3-4 minutes on each side for medium-rare. Adjust cooking time based on your preferred level of doneness:
    • Rare: 2-3 minutes per side
    • Medium-rare: 3-4 minutes per side
    • Medium: 4-5 minutes per side
    • Medium-well: 5-6 minutes per side
    • Well-done: 6-7 minutes per side

5. Add Butter and Aromatics:

  • In the last minute of cooking, add the butter, crushed garlic, and thyme or rosemary to the skillet.
  • Tilt the skillet slightly and use a spoon to baste the steak with the melted butter and pan juices.

6. Check Doneness:

  • If you have a meat thermometer, check the internal temperature to ensure it’s cooked to your liking:
    • Rare: 125°F (52°C)
    • Medium-rare: 135°F (57°C)
    • Medium: 145°F (63°C)
    • Medium-well: 155°F (68°C)
    • Well-done: 160°F (71°C) and above

7. Rest the Steak:

  • Transfer the steak to a plate and cover loosely with aluminum foil. Let it rest for about 5 minutes. Resting allows the juices to redistribute throughout the meat, making it more tender and flavorful.

8. Optional Deglazing:

  • If desired, you can deglaze the skillet with a tablespoon of balsamic vinegar or red wine. Scrape up any browned bits from the bottom of the pan and let the liquid reduce slightly to create a quick sauce.

9. Serve:

  • Slice the steak against the grain and serve with your favorite sides.
