Ingredients:
- 1 cup Poha (flattened rice)
- 2 medium-sized potatoes, boiled and mashed
- 2-3 tablespoons cornflour (for binding)
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon turmeric powder
- 1 tablespoon coriander leaves, chopped
- Salt, to taste
- Oil, for frying
- Water, as needed
Instructions:
Prepare Poha:Wash the poha under running water for a few seconds and drain the excess water. Let it rest for 5 minutes until it softens.
Make the Mixture: In a large bowl, combine softened poha, mashed potatoes, cornflour, chopped onions, green chilies, cumin seeds, red chili powder, garam masala, turmeric, coriander leaves, and salt. Mix well to form a dough-like consistency.
Shape the Fingers: Take small portions of the mixture and shape them into finger-like sticks, about 3-4 inches long.
Fry the Fingers: Heat oil in a deep pan over medium heat. Once hot, gently drop the poha fingers into the oil. Fry them in batches, turning occasionally, until golden brown and crisp.
Serve: Remove from oil and drain on a paper towel. Serve hot with ketchup or green chutney.
