Classic Bengali Mango Pickle
Ingredients:
- 4-5 raw
mangoes, cut into pieces
- 1 tbsp
mustard seeds
- 1 tsp
fenugreek seeds
- 1 tsp
turmeric powder
- 2 tbsp red
chili powder
- 2 tbsp salt
- 1/2 cup
mustard oil
Process:
- Wash and dry
the mango pieces thoroughly.
- Heat mustard
oil in a pan until smoking hot, then let it cool.
- In a bowl,
mix mango pieces with turmeric powder, red chili powder, salt, mustard
seeds, and fenugreek seeds.
- Add the
cooled mustard oil and mix well.
- Transfer to
a clean, dry glass jar.
- Seal tightly
and let it sit in a sunny spot for 7-10 days, shaking the jar daily.
