Classic Bengali Mango Pickle


Ingredients:

  • 4-5 raw mangoes, cut into pieces
  • 1 tbsp mustard seeds
  • 1 tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 2 tbsp red chili powder
  • 2 tbsp salt
  • 1/2 cup mustard oil

Process:

  1. Wash and dry the mango pieces thoroughly.
  2. Heat mustard oil in a pan until smoking hot, then let it cool.
  3. In a bowl, mix mango pieces with turmeric powder, red chili powder, salt, mustard seeds, and fenugreek seeds.
  4. Add the cooled mustard oil and mix well.
  5. Transfer to a clean, dry glass jar.
  6. Seal tightly and let it sit in a sunny spot for 7-10 days, shaking the jar daily.
